  • Juice of 2 or more lemons (according to taste) 4 crushed garlic cloves

Variations:

For thicker Tahini, use half a cup of water only. Add an additional 1/ 3 cup for more diluted Tahini (for sauces). The Tahini will thicken slightly after some time in the fridge.
The best results come from mixing the Tahini by hand, but it can also be prepared using a food processor.
Serve in a dish with olive oil and pine nuts, or topped with roasted sesame seeds.

Tips:

  • The tahina will be whiter the colder the water used. Some of the water can even be replaced with ice.
  • If you don’t plan to use the tahina on the day that you prepare it, it is recommended to add the garlic immediately before serving.
